Spring Rolls with Vietnamese Dipping Sauce
I spent time this morning sharing about my Kitchen Tool Box and answering some general cooking questions at a MOPS meeting in Auburn. It’s always great to talk about food and how to make things we do at home on a regular basis as easy as possible (especially for those of us who have young children at home.)
We also talked about healthy snacks for kids and we made some fresh vegetable spring rolls (made with Vietnamese spring roll wrappers and filled with carrots, napa cabbage, cilantro and green onion). Below is one of my favorite recipes that I like to use with spring rolls, potstickers and lettuce wraps.
Vietnamese Dipping Sauce

1/3 cup lime juice
2 1/2 T brown sugar
2 T fish sauce
2 T Sambal
1. Place all ingredients in a small bowl and whisk well to combine.
2. Transfer to a storage container. Cover, label and refrigerate.
